Okay so I have declared my families love for Pizza. Did I mention that Jesse and I met when we both worked for Pizza Hut? Yup he was a delivery driver and I was a server. You might say that there was more than just a mutual love of pizza being rolled out in that hut!
He played hard to get, but I won.
Ten years later and he still plays hard to get, well hard to get enticed into spicing up his flavor pallet and trying new things. Jesse is my meat and potatoes guy. He will admit any and every day of the week that he is a carbaholic. He would take the last part of the burger and leave it behind just to make sure he has room for the bun.
He loved the low carb almond crust pizza that I created, but I wanted to step it up another notch and put another low carb spin on the pizza favorite. Check out this super tasty adaptation of pizza. It is packed full of protein and screams, cheesy, flavor packed pizza.
Chicken Breast Pizza
- 4 boneless, skinless chicken breast (each approx 4oz)
- 1 cup buttermilk
- 1 clove garlic mashed
- 2 tsp onion minced
- 1/2 tsp dry dill
- pinch black pepper
- 1/2 tsp kosher salt
- 1 cup shredded mozzarella cheese
- 15 slices of pepperoni
- 1 cup pizza sauce
Get a freezer Ziploc bag. Combine buttermilk, garlic, onion, dill, salt and pepper all in the bag. Close the bag up and mix well by kneading the bag with your hands. Once well mixed place chicken breast in the bag. Marinate overnight if possible.
Preheat oven to 350
After the Chicken has marinated and the chicken is still in the bag. Remove as much air from the bag as possible and seal tightly. Lay the bag flat and tenderize the meat by pounding it with a mallet. (you can use anything handy if you don’t have a mallet. Rolling pins or even a can of veggies work great for this).
Remove the chicken from the marinade, and place on a cookie sheet. Bake off chicken for approx 20 minutes. Temperature to reach at least 150 at this point (we are going to cook it longer after topping it.)
Once chicken is pre-baked divide sauce between cup of sauce on each chicken. Then sprinkle mozzarella cheese over each. Lay out the peperoni on top of cheese (build it just like a pizza!)
Return Chicken to oven for additional 8-10 minutes. We are just trying to melt that cheese and get the pepperoni to melt into the cheese.
